Mongolian Pork Fried Rice



Ingredients:
¼-½ lb small pork chop
3 cups cooked cold white long grain rice
1½-2 large carrot (peeled, chopped)
2 large green onion (thinly sliced)
3 cloves garlic (thinly sliced)
1 inch ginger (chopped)
2 egg
½ ts garlic salt
3 tb peanut oil

Marinade:
¼ ts ground ginger
1 ts soy sauce
2 ts hoisin sauce

Sauce:
2 ts oyster sauce
2 tb soy sauce
½ ts dark soy sauce
3 dashes white pepper powder
¼ ts sesame oil
¼ ts Maggi seasoning
1 tb sugar or to taste
Salt to taste

Method:
1. Remove all of the fat from the pork and then cut it into small ¼ inch square pieces. Places these pork pieces in a container that has a tight fitting lid and add the marinade. Cover and let it marinate for 30 minutes at room temperature.

2. While the pork marinates, prepare the other ingredients. Using your hand, remove all of the lumps from the rice and then set it aside.

3. Peel the carrots and cut them into small ¼ inch squares. Place them in a bowl and cover them with hot water. Then microwave them on high for 2 minutes (this is comparable to par boiling). Remove them from the microwave and drain them thoroughly in a colander and set them aside.

4. Rinse the green onion under cold running water and dry it with paper towel. Cut off the bottom base and about an inch from the top of the greens and discard. Then cut the remaining stalk into small slices. Set aside. Next, chop garlic and ginger into small pieces. Set aside.

5. Once the pork marinates, heat a large non-stick wok on medium high. Add 1 tablespoon of oil and let it get hot. Once hot, add half (or less) of the prepared ginger and garlic - wait a few seconds or until fragrant. Add the pork and let it cook about 3 minutes. Add the sauce. Set it aside.

6. In a different wok, add 2 tablespoon of cooking oil on medium high heat. Add the green onions and the rest of the prepared garlic and ginger - stir fry for 30 seconds or until fragrant.

7. Add the rice and stir fry everything for about 2 to 3 minutes.

8. After 2 to 3 minutes, make a large well in the center of the rice. Crack the eggs directly into the well and stir fry it until it is cooked through, a little less than 1 minute. Then mix it into the rice.

9. Once the egg is thoroughly mixed in, add the carrots and pork. Mix everything together thoroughly. Add garlic salt to taste. Ready to serve!
