Beef & Broccoli



Ingredients:
1 lb filet mignon
2 crowns of broccoli
1 can of organic beef broth
sugar
salt
Shaoxing wine
rice wine vinegar
oyster sauce
cornstarch

Marinate:
1 tb shaoxing wine
1/2 ts salt

Sauce:
1/2 cup beef broth (organic beef broth)
2 ts sugar
2 ts rice wine vinegar
5 tb oyster sauce

Thickener:
3 ts cornstarch
a little bit of water to dissolve it

Method:
1. Cut beef filet into small 1 inches and marinate. Set it aside for 20 minutes.

2. Cut tips of broccoli. Place them in a microwavable-safe bowl and cover with hot water - microwave on high for 2-4 mins. Then drain water and set aside. Make sure they are thoroughly dry before adding to stir fry.

3. Mix all ingredients for the sauce. Stir 'til sugar dissolves. Set aside.

4. Prepare the thickener for the sauce.

5. Heat wok on high, add 2 tbsp cooking oil. Add beef. Stir fry until beef is cooked through (lightly pink in the center).

6. Add in broccoli, stir it around - let it cook for 1 minute or less.

7. Add in the sauce. Let it come to a boil.

8. Add in the thickener until the sauce becomes thick. Done!
