Ingredients:
½ lb pork belly/pork loin, thinly sliced
2 cups cabbage, bite-sized pieces
5 cloves garlic, cut in pieces
5 dried red chilies, deseeded & roughly chopped
2 ts Shaoxing wine
1 tb soy sauce
½ ts sugar
1 tb water
½ ts black vinegar
2 scallions, cut into 2-inch lengths
Method:
1. Add 2 tb oil in wok, high heat, stir-fry meat until caramalized. Add garlic (& chili), turn down heat to medium, stir for 1 minute.
2. Add cabbage, wine, soy sauce, sugar, and water.
3. Turn up heat to high, cover the lid and let cabbage cook for 1-2 mins.
4. Uncover lid, stir in dark vinegar & scallions to taste. Cabbage should be wilted, but still slightly crunch and caramelized.
